Don’t feel like going outdoors to roast marshmallows and make s’mores? Whip up a batch of these babies and have s’mores inside! They are such a delicious summer treat and definitely a crowd pleaser!
This recipe is gluten free, and it’s paleo as well if you can find paleo (refined sugar free) marshmallows. I just used regular marshmallows because I didn’t want to go through the trouble, but the recipe will work either way.
Ingredients
- 2/3 cup almond flour
- 1 tsp salt
- 1 tbsp cacao powder
- 6 oz. dark chocolate bar
- 1/2 cup melted coconut oil
- 3/4 cup coconut palm sugar
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup dark chocolate chips
- 2/3 cup mini marshmallows (adjust if needed)
- 1/2 cup gf graham cracker crumbs (about 6 crushed gf graham crackers)
Directions
- Preheat oven to 350 and line a 8×8 baking pan with parchment.
- In a medium bowl, whisk almond flour, cacao powder, and salt.
- In a large bowl, combine chocolate and melted coconut oil. Microwave every 30 secs and stir until fully melted.
- Add coconut sugar, 2 eggs, and vanilla to chocolate mixture and whisk until combined.
- Slowly pour dry ingredient mixture over chocolate mixture, stirring until fully incorporated. Add chocolate chips and stir again.
- Pour mixture into baking pan and sprinkle marshmallows, graham cracker crumbs, and additional chocolate chips (if desired) on top
- Bake for 29-32 mins until marshmallows are golden brown and a toothpick comes out clean from the brownies
- Cool, serve, and enjoy!
If not eaten immediately, I would refrigerate these for a couple days or freeze them if you’re planning on keeping them for longer. These remind me of sitting by a campfire and have been my favorite summery dessert lately! I hope you like them as much as I do!
